Ingredients

Stir before every burst, and stop while it still looks barely set. Microwave eggs go from soft to rubbery in seconds, so cook in short 30-second bursts, stirring between each, and pull them while they're just-set and a little glossy — they finish in the residual heat. Grease the mug first or they weld on.

    Why the bursts. A microwave heats fast and unevenly — stirring evens it out and keeps the edges from turning to rubber while the middle's still wet.

    Grease the mug (butter, oil, or a quick spray), or the eggs stick like glue.

    Make it a fuller meal: stir in diced ham or a spoon of beans, pile on salsa, or tip it over toast or into a tortilla.

    Big mug, low fill — eggs puff as they cook, and a roomy mug keeps them from climbing out.

    Vegetarian and gluten-free; easy dairy-free

    Gluten-free: naturally — just check any add-ins.

    Dairy-free: use water instead of milk and a dairy-free cheese, or skip the cheese.
