A shelf-stable riff on the Porcini Risotto — built entirely from the cupboard and cooked hands-off in the Instant Pot. Dried porcini and their soaking liquid do the heavy lifting; dried onion, garlic powder, and bouillon stand in for the fresh stuff. No shopping trip, no stirring — the kind of no-fresh-ingredients meal the old Survivor's Instant Pot was built on.
No Instant Pot? Stovetop works too. Toast the rice in a wide pan, then add the bouillon broth (mixed with the strained porcini liquid) a ladle at a time, stirring often and letting each be nearly absorbed, 18–22 minutes, until creamy and al dente. Finish the same way — cheese and butter beaten in off the heat.
Strain out the grit. Dried porcini shed sand as they soak, so strain the soaking water through a coffee filter or a paper towel and leave the last cloudy spoonful behind. It's too good to skip and too gritty to pour in straight.
Bouillon math. About 1 tsp Better Than Bouillon (or 1 cube) per cup of water. Any kind works — chicken, vegetable, or a mushroom base to double down on the porcini. Hold the extra salt until you've tasted.
The pantry swaps. A tablespoon of dried minced onion (or a teaspoon of onion powder) stands in for a fresh onion; ½ tsp garlic powder for a couple of cloves. Not identical to fresh — but this is a no-shopping-trip recipe by design.
Make it a meal. Stir in a drained can of mushrooms for more body, or a handful of frozen peas or spinach in the last minute — all pantry- and freezer-friendly.
The fresh version: when you do have fresh mushrooms and stock, the full Porcini Risotto — browned cremini, white wine, the mantecatura — is the one to cook. This is its cupboard cousin for the weeks you can't shop.
Vegetarian: use vegetable bouillon and a vegetarian hard cheese (the green-can Parmesan is usually made with microbial rennet).
Vegan: vegetable bouillon, nutritional yeast or a vegan parmesan, and olive oil to finish in place of the butter.
Gluten-free: naturally gluten-free — just check that your bouillon is gluten-free.
