Ingredients

Hot liquid first, then the flakes — and don't over-stir. Heat the water or milk until steaming, stir in the flakes, and let them sit half a minute to drink it up; then stir just until creamy. Beating instant potatoes too much turns them gluey.

Easier, if you like

  • A single-serve instant-mashed cup (just add water) is the zero-effort version; this is barely more and lets you load it your way.

Method

    Cook's notes

Instant flakes are the magic — they rehydrate in seconds and keep for ages on the shelf (pantry insurance).

Milk over water makes it richer, and a knob of butter is non-negotiable for flavor.

Make it a meal: top with leftover shredded chicken, a ladle of chili, or some steamed broccoli.

Don't over-stir — instant potatoes turn gummy if you beat them; gentle keeps them creamy.

    Vegetarian; easy vegan and gluten-free

Vegan / dairy-free: use a plant milk and vegan butter, and skip or swap the cheese.

Gluten-free: most plain instant potato flakes are gluten-free — check the label.
