Ingredients

Salt the cucumbers first, then wring them dry — that's the whole difference between crisp and watery. Tossed with a teaspoon of salt and left 15–20 minutes, the slices give up their water now, so the brine stays punchy instead of turning into a puddle and the cucumbers stay crunchy. Skip it and the salad still tastes good, but it goes limp faster.

    Cucumbers: English (hothouse) or Persian are best — thin skins and few seeds, so no peeling or seeding. If all you have is regular slicing cucumbers, peel them and scrape out the watery seeds first, or they'll dilute the brine.

    Onion: red is the prettiest and mildest raw; sweet (Vidalia) is gentler still; yellow works but is sharper — soak sharp onion in cold water for 5 minutes to take the bite off.

    Sweet or sharp is your call. A quarter cup of sugar is a balanced sweet-tart; add a spoonful more for the classic sweet “refrigerator pickle” version, or hold back for a sharper, more savory salad. Taste the brine before it goes on.

    It keeps and improves. In a sealed jar in the fridge it's good for 4–5 days and a little more pickled each day; the cucumbers soften over time but stay tasty. With no mayo or dairy, it's picnic- and potluck-safe out of the fridge for a couple of hours.

    Serve it next to anything rich or grilled — burgers, fried or roasted chicken, the garlic-anchovy chicken thighs, or tucked into a sandwich. The bright vinegar cuts right through fat.

    Easier, if you like

    • Truly rushed? Skip the salting step — just slice, brine, and chill. It'll be a bit more watery and a touch less crisp, but still good; eat it the same day rather than saving it.

    Vegan and gluten-free as written

    Creamy version: for a sour-cream cucumber salad instead, salt and drain the cucumbers as above, skip the vinegar brine, and dress with about ⅓ cup sour cream, 1 tbsp vinegar, 1 tsp sugar, and the dill. Serve cold, the same day.

    No fresh dill? ½ tsp dried dill, or leave it out — the salad is good plain. A little fresh mint or a pinch of celery seed are nice swaps.
